OSTRICH SAUSAGE WITH RED ONIONS AND BEAN AND FETA CREAM
Ingredients: 500 g KLEIN KAROO OSTRICH SAUSAGE * 4 small to medium red onions, cut into 5 mm thick rounds * 30 ml olive oil * 30 ml red wine vinegar * 15 ml brown sugar
Method: Panfry or braai the sausage to your liking. Place onion rounds with rest of ingredients in a shallow frying pan over medium heat. Fry until all liquid has evaporated, only turn once.
Serve onion with sausage, and bean and feta cream.
BEAN AND FETA CREAM
Ingredients: 400 g can cannelini beans, rinsed, drained * 100 g Greek feta cheese, crumbled * 10 ml Dijon mustard * 1 clove of garlic, crushed * 30 ml olive oil * 30 ml lemon juice * 30 ml ﬁnely chopped ﬂat-leaf parsley
Method: Combine all ingredients, except parsley, in a food processor. Add parsley and season.
Will keep well in fridge in airtight container for three days.
